I'm surprised more people haven't suggested LoTRO. Especially since the OP prefers PVE over PVP. It's free, great story, decent populations and friendly community.
I agree with most except that Rift looks like it has dropped off pretty significantly this last year. Just checking Xfire (yeah I know) Lotro has a 4 to 1 player advantage over it.
I was really not impressed with Rift at all. The game was polished though, I wil give it that. I do think the company and developers for Trion are talented, they just need to make a more in depth game.
I think part of it comes down to that Turbine (WB) does not own the DDO or Lotro franchises, they just license them. There may be some language in the contract that prevents them from offering muti-sub deals with either game.
I would definitely say Feral Intendant. The class was so overpowered at launch it got hit with a major nerfbat. But it still is a very powerful solo class.

The loot system is one of the things that is very similar to AC. Random loot off most mobs in the game. Like AC its roots are in kill things and take their stuff.
