  Sigs use BBML, so just wrap the text in a color tag:

  [color=red]This is my sig in red[/color]

  That text in your sig parameter (in your options) would make a red text sig.  Hope this helps

  Now, quotes (what appears under your avatar) to not allow BBML because that would make things too messy.
