Disclaimer: outdated info since I haven't played in years.
Last time I played, the advice was still to try and focus in one of the three basic progression lines that you find most fun (combat, crafting/trading, gathering) and level it up to the point where it is profitable, specializing in one of the progression subpaths.
PVE, HCEs from tier 7-8 upwards were fun and profitable back then. You could look for builds online that also have sets that let you skip parts of the expedition in order to hit the bonus timer needed to get the map tokens for the next tier.
PVP, you could join one of the big guilds/alliances that have territories in order to take part and have fun with the big ZvZ fights.
Islands are also be fun and can be very profitable if you do the right things on them. Back when I played I was running tinkerer laborers in Caerleon because you could buy T7 and T8 manuals from the market dirt-cheap and turn them into high tier mats, but I am pretty sure things have changed since then. Was running 3 personal islands and two guild islands like that, and from what I hear my old guildmates are still using them (I opened them up to them before leaving). Just do not blow your focus on carrots. At least back then it was one of the most popular, and also one of the silliest uses of focus.
Crafting, highest tier is not necessarily the best to specialize. I had lots of success trading with T6 - T6.2 cloth and all sorts of stone upwards of T5 back then.
Lewpac had pretty solid guides on everything back then, including new player ones. I think he still does them.
Mind you, this info is a couple years old, someone might want to fill in the updates. I hope my memory did not fail me in the above.
It's worth giving it a try if you like sandbox MMOs at all. It can be lots of fun and has lots of options on what to do.

There are solo dungeons out in world that you can enter now. Rock formations with glowing lights coming out of them. You can stop gathering or whatever you are doing and enter. They are color coded for tiers. Big rewards in some of them. Like a green glow is solo blue is group so on.
All static dungeons have been reworked.
Zones redone.
Another thing is the open world enemies will increase in strength the longer they are left alive.
There have been a ton more changes but those have been really great
Is there big difference in pvp since there is only 1 server? na vs eu player
You just get more players from those regions during their peak hours. There are some region based guilds, but most are open to anybody that speaks the guilds language of choice.
What's nice is nobody can really farm resources/dungeons in pvp openwork areas risk free at late night/early morning hours... because there is always a swoop of logins from another region around the world.
Maintenance is at 5am Eastern everyday for 30 mins.
As someone who normally hates PVP centric MMOS I actually love this game
I can't wait till I have a few more backup sets of owpvp gear... so I can play faction warfare, guild warfare, hellgates(pvp enabled group dungeons), and the crystal league(ranked pvp arenas 5v5 and 20v20)
It's also about time to find a guild, at 100hrs + ... I think I have the basics down.
I spend too much time in arenas... after the first 3 three wins everyday... you get no rewards. But usually I play them for hours just because they are fun... and I'm learning how to pvp against different builds.

PVP is well balanced and you'll never encounter a group made with a single "best meta one shot in your knees" build. Never.
There's a lot of solo content, PvE/PvP and you can swap to group content in minute and find yourself in a 20 man group (the good part for me is, even you're in a big group, you're not safe at all).
Premium: ok, it's a must have but you can get some coupons from streamer or pay for 30 days or gather suffisant silver in game to pay it (it take some time to be in this group).
is it newbro friendly? a lot!
it's a single server so there's interaction, group content at any time in the day!

As someone who loves to heal in MMO's too I can't wait to build a holy staff and give it a shot. I feel like its going to be very rewarding to be a good healer in this game
People get sometimes pissed if you are a noobie arena healer (because there is only one per team).
That being said, I play dps and healers in almost all MMORPG'S (only ~15% tank). But healers are awesome in this game. Holy Staff (vs nature staff)... is definitely how I would roll.
That being said, I've seen Nature carry a team too

While I have you... any websites to find a guild. I'm competitive, but want a guild that has 30ish+ year old players and... PvP, Pve etc (I love pvp).

Afair, all good guilds (big and small) post recruitment threads in the game's official forums. Just do your due diligence, as with any other game, lots of crappy ones posting the effortless, sloppy and generic "come join us let's have fun" too. I managed to find a couple good ones during my time in the game that way, both for ZvZ and small scale PVP/PVE. No other more optimal way that I know of.
Also keep an eye out for the "potato guilds" (guilds set up to farm their members via the in guild taxes), lots of them in the game.
