The one that really got me into em, Goldeneye on N64.
Not a FPS fan but Goldeneye on N64 was the only that I really enjoyed. The IP/movie/screenplay was awesome eg Sean Bean et al. and then taking out ruskies with various spy tools/weapons, top game; unless you heard/had to say: "Stop playing as Oddjob!"
I'm a big Modern Warefare and Gears of War fan, but I think the most polished, near perfect FPS I have ever played is easily Halo Reach. They out did themselves with that multiplayer, not to mention the campaign was a blast. I can't wait for Gears of War 3 though.
A mod for Quake III Arena called "Weapons Factory Arena". Ahh.. Still remember that game. =( The Dragon Ball Z mod for Quake III was good, too. Still one of the best games out there. Not sure if it still exists.

For single player experience, it was Rogue Spear for me.
For multiplayer, it was BF2 barely edging out BF2142.

I loved how DeusEx gave players so much freedom. A player could actually go through most of the game either destroying all in plain sight or simply killing the fewest amount of enemies. Sure, the ending was determined by your actions in the final level of the game, but the ability to do things in so many different ways gave that game even today the highest replay value.
Modern Warfare I and II were linked games which centered around character oriented story which was well done. They came with several goodies, like the final level showcasing the talent of inifnity ward and used as a benchmark level. The airplane level in the first game after the end credits. Modern Warfare II had the Challenge Mode which was quite cool. It didn't need to have anything else but had multiplayer as well.
As for multiplayer games...
Unreal Tournament Series (UT99, 2003/2004, UT III)
Modern Warfare I Multiplayer (I enjoyed it except for everyone going Juggernaut or martyrdome)
Quake 3 Arena / Open Arena (Definately Open Arena if you love attitude)
Currently the better shooter multiplayers are on Linux. They model older games but have some newer content and weaker graphics than todays games, but the attitude you miss and love from the 90s is there. Unfortunately they only work with Nvidia cards. I am currently playing one that feels more like a Action Oriented PvP RPG on Linux, but its in first person and allows players to do neat things with their weapons depending on their class mode and status. Like, a character who is in stealth mode and cloak mode, has the highest damage with melee weapons.
Windows Gaming is very commercialized and mainstream while Linux Gaming has Attitude and Difficulty missing from commercial games. Problem is that most Linux Games crash on ATI cards. A player on an Nvidia Card can play any game on any platform.

The most fun I ever had was the original version of Day of Defeat. Certainly not the best I've ever played in terms of anything measurable - just the most fun I've had. I spent way too many hours playing that game.
I was pleasantly surprised when I went from Apprentice to full 5 star Elite in under 2 months. I was pleasantly surprised again when I went from Elite to just barely Hardcore in 2 weeks. Apprentice, here I come!
