If you don't mind an old game i loved FFXI but its been out for quite some time. It has a battle system i'm really fond of and a very strong community. There isn't much pvp if any but it was one of my favorite games along w/ player economy and your computer should be able to handle it. Fun crafting and all, i'd say it has everything you want except for pvp.
Too old... if the game was newer I'd have recommended it too. Now I'd suggest not trying it.

Seriously though, that game is literally the same thing as living a separate life. I play games to have fun, not to live out an additional mundane existence.
Of the three you listed I've only played Fallen Earth, but would recommend it highly.
As for alternatives I'll throw a vote to EVE as well, excellent game you just need to get your head around being a ship.
For a really off-base play experiance there are a couple indie zombie apocolyse games on the horizon that look like they might shake the genra up if they can be pulled off right.

FFXI would be a good recommendation if the OP didn't want to quest to level. FFXI is the worst game you would ever want to play if you like questing to level.
If you want a deep game with a rich storyline with a stable playerbase.. FFXI is the game though. Some of the best PVE you will find. The zones are huge, and while you do "zone" the world is so big, its not noticeable like it is in games like EQ2.
PVP games... Age of Conan, if you want to quest to level.
Darkfall is good if you enjoy first person type play, and enjoy nothing but PVP. It has crafting, but its really ho hum compared to other games like EQ2 and Vanguard.
Lord of the rings online is similar to WoW and EQ2 and might fit your needs.. but the pvp is terrible.

To the OP Eve is a very different game. When I left WoW, Eve was the only game that I tried that was good enough to keep me away for good!
Both DF and FE don't have full time trials yet but both are a lot of fun.
