I can't see undead. Maybe Vampire but overall I think it would be easier to institute a Necro class rather than a full race in this circumstance. Skaven are already in as NPCs so I could see this as an option.
The real problem would be balance. Balancing a class for an existing race wouldn't be terribly painful for the Devs but what other 'goodly' race are they going to add? Gnomes? Some sort of wood spirit? One thing WAR (online) is trying to do is stick to the Lore of Warhammer(the tabletop/story line) as much as possible.

what about chaos, will anything on them grow? or change while they level?
What I have heard and read from Mythic, Empire and Chaos wont grow or something.
But they they better looking armour at higher tiers.
At start its just some old clothes or rusty plates.
And later on, shining armours with lots of nice parts. ^^
Well to be honest i don't think they do that dude, Devs can give preferential treatment and make races look cool in pictures or fan art, but i don't think they give preferential treatment in game, since everything has to be good and balanced.

i havent read alot about the proffesions sadly, might do that soon, but i hope proffesions wont be to complicated, i mean i vanguard.. Wooow, that was a pain, what should i do, ok whats next.. and damn item is broken... in other words, i didnet like the proffesions in vanguard :-p
But the landscape in war.. damn, i havent seen a more pretty and well made enviorment.. the way the trees and moon in the night are made.. its very nice i think, something that really makes u wanna go and explorere

In the preview weekend, I spent most of my time as a swordmaster and a sorcerer. However, if they fix the pathing issues (and I'm confident they will) I might try my hand at a White Lion of Chrace. The pathing issues made them difficult to play in the preview weekend so I only got to level 3 or so. Looking forward to giving them another look.

I am thinking about a Shaman if I try the game.
I didnt play closed beta but I did play the preview weekend.
And the class that I roll has nothing to do with preview weekend.
High Elf Shadow Warrior for at least the first 3 months.
After that my guild plans on rolling Dest toons, and then I will be playing a Sorc.
Hornet. Although Bumble is also a possibility.
Going to play all the classes but swordsman and warrior priest seem the most appealing at the moment.
