  To my knowledge: There's the Alpha, Beta, Gamma and Delta Quadrants, so that make it four.

  I would be happy with just 2, Alpha and Beta. This is where the majority of Star Trek took place anyways. Delta is just too far away to make it practical and Gamma is only accessable through the Bajor wormhole. I would however like to see at least a portion of Gamma open in maybe an expansion sometime in the future after release.
