Hallo... well, you can do several things to join a guild. One is looking at the official forums - there's a stickied thread with a comprehensive list of guilds, their alignments and leaders. Many have links to websites where you can read their backgrounds (to decide which one is right for you) and the name of an officer that you can contact. Make sure that they are on the same server as your are playing.
Second is... if you are still on the newbie island, port to the mainland asap. There are no guilds on the starter islands.
Thirdly, if you are on the mainland already - ask questions in region. Ask anything about the game, show that you are interested in learning the intricacies of the game and someone is sure to take you under their wing.
Lastly, you have to decide whether the guild is right for you... take your time to explore your options... your progress might be a little slower in the beginning but you will be better off in a guild of like minded people that want the same thing out of the game as you do (whether it be power lving, PVP, roleplaying, crafting, being silly, etc.). If you know what you want you can post what you want in the guild forums on the ryzom site... guilds will then come to you. Good luck!
Not only the Atys Paladins are helpfull Almost every guild is real noob friendly, ask 'Fyros defenders' for a nice, little guild. All cool people in there

Also, you could check out Atys Paladins. I joined about 2 weeks ago. What a great group of helpful, mature and fun people. http://www.atys-paladins.net/
