Ok, I have been wondering about this for some time now. Has anybody ever put forth the effort to build Amity with NPCs to see what rewards are unlocked?
Some of those NPCs require a lot of Amity and I would like to know is it worth it? Do some of them give you a rare piece of gear or something? Do they unlock secret quest that maybe give you some rare reward?

I was told if you build Amity with Merchant NPCs they will sell you better items. Have you heard that?
- Knowledge - to further gain Amity with others.
- Shop Unlocks - lets you buy items from the NPC.
- Perks - e.g. better bargain chances with trader NPC.
Provided the end-game progression centers around upgrading a select piece of gear over and over again, the Amity items will likely be most viable mid-game. They represent very cost effective alternatives for mid-game players, letting you get hands on gear that would otherwise cost lots of coin (for a fraction of the cost).If you are planning on specialising on non-combat gameplay, then getting Amity with the relevant NPCs sounds like a decent proposition. Better bargain attempts when trading will reflect on your overall profits in the long term. Similarly, you may unlock outfits that improve Amity gains, carry limits or harvesting.
I'd say the design works well, where Amity is most rewarding to those who are interested in it in the first place. If you are someone who loves to explore all of the game's systems, then chances are you will benefit from the unlocks in some way. If you are someone who loves the gear grind and the very end-game content, you probably won't benefit all that much from it.

That's the only time I ever used the system; to be able to buy those "better items".

I don't know how well you all can see this and you may be able to click on it to enlarge it but in the lower left this NPC has 3 quest I can get at different levels of Amity. The highest one is 200 Amity. I have seen some with quest requiring much more.

I get the Knowledge Amity and Shop Amity but these Quest Amity have me wondering just what do they give.

Generally you use it to acquire Kmowledge (sometimes is the only way) or receive rare quest (which IMO are pointless).
I mostly use my Amity to buy Items from vendors though.
You can also get Rocaba armor through amity in Valencia if I'm not mistaken. Which can be nice, since the stupid helmet of that set is only dropped by centaurs. And people barely ever kill those stupid things.

I suppose the real question is, has anyone gone around and checked every NPC to see if there is Amity unlock on them because there a lot of NPCs and every one of them has the possibility of an Amity content unlock. Places like Valencia would be the obvious example. Few people explore Valencia beyond spamming R on question marks for Knowledge. We have no idea what is being over looked there and the towns around it.
Buying Grunil is probably the worst kind of investment for Amity.
You can actually make Millions each day with Amity, but that's a secret
I'm mainly a life skiller. I prefer to use my energy for other things.
Plus I absolutely detest the amity mini game. So have at it.
