I'd say "content" for me typically tends to be coded goals, though not necessarily even goals I'd be interested in personally. Things like new places to go, interesting quests of varying types, something (preferably a lot of somethings in varying flavors) to target as an activity with a purpose. Mindless hack and slash isn't fun, but hack and slash with a meaningful objective is something else. Mini-games, economies, crafting, pvp zones of control, exotic dungeons, hero levels, raid content, even live events are all things I'd lump under "content." Of those, I really only like about half of them, but the game will still seem more appealing to me if it offers alternatives to the usual choices I make in MMOs.
I do like to roleplay as well, but MMOs really aren't designed to support it very well, at least not in my experience. There also aren't many people who do it these days, and the number seems to shrink every year. Folks over at SOE are/were extremely fond of saying, "Make your own content," but that only works under a perfect set of circumstances, and it's a difficult state of mind to maintain. A game world needs to be more than just a theme, it needs to be theme park- rides of all sizes and speeds for all types of people.
Content is the stuff put into a MMO after the foundation is set to give meaning to things, and provide the player with things to do.
For example in speaking of websites, content refers to the information and activities provided. If you went to a website with nothing on the pages, you would say the site lacks content.
The same with a newspaper. If you were handed a bunch of empty pages you would say it lacks content.
It's no different with a MMO. If you play a MMO that lacks information and activities in game, then it is lacking content.
Grinding is not considered content, because it is a mechanic and boring thing to do (Kill the mob, rest, kill the mob.........etc)
Content is something that stimulate your brain, Quests, Castle sieges, Storyline, Raid dungeons and stuff like that.
