I'm a pretty pro sandbox, for me the greater the sand the better, but there are things that I don't like.
1. I don't want to have to eat constantly, but on the flip side of that I'd really like for food to increase stats enough that people wanted to eat, and buy food items from crafters. It's a narrow band I sit in, I don't want to have to eat to beat that big boss, and if they make food too powerful then you would have to, but I would like the whole thing to be a vital part of the game.
2. I don't want to have to gather all the time. I hope they make it so that there's some balance between crafters and adventurers. I did feel like EQ had it.
3. I don't want to have to sit in a tavern. I would love for SOE to give people that like taverns the tools that would make people want to hang out there, but I don't want to have to.

The more Ultima Online it's like, the more I'll be interested. It doesn't have to be like Felucca UO, as I'm sure they have their own plans, but the PvE sandbox elements there were second to none in most cases.
That said, I don't expect a UO clone as it's a different game, but it's definitely a place they can look at and see what was there as a basis for things (especially since it's presumably a fantasy based setting).
Though with such statements as "the biggest/best sandbox ever made" I'm expecting it to surpass UO in a lot a ways, if not down right have the same feeling and capabilities thereof.
I wouldn't be all that interested in a hunger system unless it wasn't too intrusive of game play and the other features. Then again if it's done right it may be interesting.
I doubt it would force anyone to do much of anything, as sandboxes are typically non-linear and let you do pretty much whatever you want (that is unless guilds or groups make something and have rulesets, such as if they make a town or have events).
