I tried Minecraft, and really had a great time exploring the world and learning the ins and outs of crafting... Then I became incredibly ill... my head hurt, I was sweating, I wanted to puke... lasted for hours.
I played again the next day during lunch at work... same thing. A quick look on Google showed that I was not alone, this is quite common with this game. So, I'm getting my money back.... but I REALLY started getting into the game.
Is there anything out there with similar depth to crafting? I just downloaded Dawntide (Why the hell isn't that game listed on this site?) and it seems promising... I bought Vangard once, but haven't been able to try it because SOE can't secure their network...
Any other suggestions?

You could try Wurm. Similar to Minecraft and I believe the creator of Minecraft even worked on the Wurm development team before he made Minecraft. However, it is first person and that might make you sick as well. I have got a friend who just cannot play first person games, makes him sick to the stomach and gives him horrible headaches.
Dawntide is not horrible, but it is definintely in a beta state. Sometimes the game is barely playable. The dev team does put out a decent number of patches, but many times the patches just make things worse. Plus, the population can be really low at times. Graphics and animations are pretty poor, but if you didn't mind Minecraft, you woulnd't mind Dawntide.
if you gotta play old school 2d games then you got loads of options, and its cheap. I know I'm wrong but I cannot help but think sort yourself out and do proper stuff.

I suggest you try Eve, Darkfall, Mortal Online, or possibly Xyson. You could even try Saga of Ryzom. All of these games provide you a sandbox in which to forge you own path. I haven't played Minecraft, but the concept is solid. Any game that has 80's graphics must have a reason so many people are playing.
None of the above games I have ever heard of giving anyone motion sickness...if indeed that is what the problem was. You may get mad enough to break some things, but that is the nature of sandboxes isn't it?

I tried Minecraft in 3rd person, it didn't help.
I can play 1st person games fine, as long as I have a good framerate. I think it's just the poor quality of this particular engine.

There are also ways for you to NOT get sick from minecraft, you may have to turn depth of field on/off, get a texture pack, change your aspect ratio. When things like what you described occur it usualy has something to do with the monitor/depth of field, so all is definately not lost.
Ah poor you, original poster! I had motion sickness only one time in video games: in CoH with a rad/rad defender... all of that swirling stuff on my screen made me motion sick after several hours of playing her.
I can recommend also A Tale in the Desert as an in depth crafting game. They have a 24 hour free trial.

You could try downloading a texture pack for minecraft. Not sure if it helps anything though.

Only reason I haven't mentioned it yet is because I too am looking for an alternative to both Minecraft AND Cubelands. I think you'll have better success with Cubelands and less sickness because it's not as jumbled and blended together which is what I think causes people to be sick.
But, I'm looking for an alternative to it because I want something more. I want to build, but I want to have other aspects of gameplay as well and with a different/better style of graphics. Cubes can only go so far. I think ArcheAge is going to be my ideal game, but I'm pretty sure nothing like it exists yet.
I can travel in a boat at over 25 knotts while all around me everyone is spewing their entire breakfast and lunch up and be smiling (!) yet Minecraft or generally 1st person perspective games cannot handle for too long. *shrugs*
