You could give Battleground Europe / WWII Online a whirl. Air combat there is a blast. I enjoyed both fighters, lvl bombing, and strategic bombing during my time playing the game. It has also seen a lot of improvement and updates lately, so I would certainly recommend it. Otherwise theres always the safe bet of the Il-2 series, althought thats not within the last 5 years...
A flightstick, ah that takes me back to multiplayer Freespace 2. Man I miss that game. I don't think I've played a flight sim since then, maybe I should give the genre a go again.

I definately want to make sure its something that will work with Windows 7.
I do love old fashioned warplanes though, so I'll consider that option.
Dogfighting is my favorite thing to do, which comes as no surprise, I'm sure.
I'm hoping that Jumpgate: Evo game comes out soonish.
