A Dragoon. You can use any class to start, at level 30 you can get the quest. You can use this guide here for details.
If you want to play DRG, here is what I would start with:
Create a MNK and lvl to 18, complete subjob quest.
Level WAR/MNK to 30, complete Dragoon quest.
Level DRG/WAR to 60, complete AF quests
Level WAR/MNK to 37, You know have a completed Subjob for DRG
Level DRG/WAR to 75
DRG is a flexible job, you'll want to lvl Thief and maybe Samurai to 37 as well... and maybe WHM.
also these subjobs blu dnc rdm nin and blm for warp when ur doing random stuff
