It's really the other way around. Why do people want the entire mmorpg difficult. Usually you can just choose to focus doing the difficult part of mmorpg.
I see the general mmorpg basically a mesh of many different content trying to make it for everyone which have difficult and easy content.
One reason I might attribute to this change is how commercialism has pervaded the MMORPG landscape by becoming central on MMORPG progression systems. If I offered you a million dollars right now for sweeping my sidewalk for one hour or a ten year contract for a million dollars to sweep my sidewalk twice a week, which option would you take? Now ask yourself why. Is it greed that compels you to take the easier option? Is it laziness? Is it desire to obtain things for which you do not have?
If I offered you two different games:
The first is one in which you can create an avatar, visit different locations, chat with friends, and participate in social activities to meet new people.
The second is one in which you create an avatar, advance to different locations, group with other players, and complete challenging activities to progress your character.
Which would you choose?
The question you are really asking is: What motivates us to play games? The answer to that question is actually multi-faceted and quite complex. It seems each macro-genre (tabletop, video, social, gambling etc.) of game engages varying emotions based on the individual, the ruleset, the stakes (read: risk), and other factors.
To answer your question more succinctly and more directly: the majority of modern MMORPG players want their games to be easy because they have different values than the original demographic of MMORPG players.
can we get that early EQ feel again? gonna be tough since our minds were expanded beyond anywhere we had ever been before. that first taste of clarity... come on. maybe VR can take us back to the feeling we might actually be in a different world again. It's going to be so exciting if we find it again... keep on looking for it everywhere.

This might seem quaint...but...try reading a book.
