Honestly I don't appreciate game music as much as I should. When I play a game - even a new game - I listen to it for a few minutes and then I just turn it off. I think the only exception is maybe Jeremy Soule scores (e.g. Morrowind and Guild Wars) but even then I'll still turn it off in preference for my own/video game audio.
But if I had to name one game that I would call a favorite it would be Pilotwings 64. It's not an orchestrated masterpiece by any means but there's just something about it that I genuinely love.

Singplayer: tough one. I really liked Mass Effect series soundtrack. But there are so many games with cool tracks
MMORPG: no brainer. Lineage 2 OST is the best by far
ps/ I always thought that music in WoW with few exception is just terrible
